Apple cinnamon quesadillas

Ingredients

  • 4 gluten free tortillas (large wrap or burrito style tortillas)
  • 2 cups shredded monterey jack cheese
  • 1/4 cup cream cheese
  • 2 tsp honey
  • 1/4 tsp salt
  • butter (as needed for frying quesadillas)

Spiced apples

  • 2 fuji apples
  • 1 tbsp butter
  • 1/4 tsp nutmeg
  • 1/8 tsp salt

Honey butter coating

  • 2 tbsp butter
  • 2 tsp honey

Cinnamon sugar coating

  • 1 tbsp sugar
  • 2 tsp cinnamon

Instructions

  • Slice the apples into thin slices.
  • Heat a large skillet over medium low to medium heat then melt the butter for the spiced apples. Add the apple slices, nutmeg, and salt to the skillet and cook the apples for 10 - 15 minutes until they lightly brown. Flip the apples every few minutes.
  • Add some cream cheese, monterey jack cheese, and apples to one half of a tortilla. Drizzle a small amount of honey over the cream cheese, cheese, and apples. Fold the other half of the tortilla over the top of the filling.
    Assemble the rest of the quesadillas in the same way.
  • Heat the same pan you used to cook the apples over medium heat. Add butter as needed to coat the pan. If there is a lot of butter left over from cooking the apples, you may not need to add any butter.
  • Cook the quesadillas until the bottoms are golden brown then flip the quesadillas. Cook the other side of the quesadillas until they are golden brown. The quesadillas should take around 3 - 5 minutes to cook per side.
  • Melt the butter for the honey butter coating in a small bowl. Mix the honey with the melted butter then spread the honey butter coating on the outsides of the quesadillas.
    Make sure to coat both sides of the quesadillas with the honey butter coating.
  • Sprinkle salt on the outsides of the quesadillas. Make sure to add salt to both sides of the quesadillas.
  • Mix the cinnamon and sugar for the cinnamon sugar coating and sprinkle the cinnamon sugar on the outsides of the quesadillas. Make sure to add cinnamon sugar to both sides of the quesadillas.
