- 4 gluten free tortillas
- 2 cups shredded sharp cheddar
- vegetable oil
- salt
Guacamole
- 2 small avocados
- 2 cloves garlic
- 1 tomato
- 1/4 red onion
- 2 tsp lime juice
- 1/2 tsp black pepper
- 1/4 tsp salt
Dice the tomato and onion into small pieces. Mince the garlic into very small pieces.
Mash the avocado in a medium sized bowl and combine all the ingredients to make the homemade guacamole.
Add the cheese to one half of the tortilla then fold the other half of the tortilla over the cheese.
Heat a large skillet over medium heat and add vegetable oil. Add the quesadillas to the skillet then cook the quesadillas for 2 - 5 minutes until the bottoms are golden brown. Flip the quesadillas and cook the other side until the bottoms are golden brown.
Let the quesadilla cool for a few minutes until they are easy to handle. Open the quesadillas up and stuff them with guacamole. Salt the outsides of the quesadillas.
