- 8 slices white bread (gluten free)
- 1 cup sharp cheddar cheese (shredded)
- 1 cup low moisture mozzarella cheese (shredded)
- 2 oz cream cheese
- 3 jalapeños
- 2 stalks green onion

Jalapeño popper grilled cheese
Heat a flat non-stick pan or skillet over medium low to medium heat. Add some butter to grease the pan.
Slice the green onions into thin slices.
Add the bread to the pan. Toast one side of the bread for 2 - 4 minutes until it lightly browns. Only toast one side of each slice of bread. Spread the cream cheese over half of the slices of bread. The cream cheese should be added to the side of the bread that has been toasted. Do not add the cream cheese to the uncooked side of the bread. Finish assembling the grilled cheese sandwiches. Start by adding the green onion, jalapeño, mozzarella cheese, and sharp cheddar on top of the cream cheese. After that, add another slice of bread that does not have cream cheese on it on top of the fillings. The side of the bread that has been toasted should be on the inside of the sandwich touching the fillings. The outsides of the sandwiches should be untoasted. Toast the assembled grilled cheese sandwiches for 3 - 5 minutes per side until the bread is golden brown and the cheese melts. If the bread reaches a golden brown color before the cheese melts, that means that the heat on your stove is too high. If the bread does not develop color before the cheese melts, that means that the heat on your stove is too high. Salt the outside of the grilled cheese sandwiches and serve.
