Ingredients

  • 9 oz gluten free pizza dough
  • 2 cups mozzarella cheese
  • 1 cup arugula
  • 1/4 cup pecan pieces
  • 2 tbsp olive oil
  • honey

Spiced pears

  • 2 pears
  • 2 tbsp butter
  • 1/4 tsp brown sugar
  • 1/4 tsp nutmeg
  • 1/4 tsp sage

Sour cream drizzle

  • 2 tbsp sour cream
  • 2 tbsp heavy cream

Instructions

  • Preheat your oven to 475 degrees.
If you plan to make your pizza on a pizza stone, then you should preheat the pizza stone in the oven and assemble the pizza on a sheet of parchment paper that can be used to transfer it to the oven.
  • Slice the pears into thin slices.
  • Heat a pan over medium heat then add the butter for the spiced pears. When the butter melts, add the pears, sage, nutmeg, and brown sugar and cook the pears for 15 - 20 minutes.
When the pears are done, they should be lightly browned and tender.
  • Roll the pizza crust out so that it is 1/4 to 1/2 inch thick.
We recommend shaping the pizza crust on a sheet of parchment paper that can be transferred to a baking sheet or pizza stone for cooking. If your pizza dough is sticky, you will need to cover your hands in flour or olive oil to prevent the dough from sticking to your hands.
  • Assemble the pizza by spreading a layer of olive oil over the pizza base then topping it with mozzarella cheese. Add the cooked pears on top of the cheese.
The pears are going to be sweet, so if you prefer more of a savory pizza then you should add them sparingly.
  • Transfer the pizza to the oven and cook the pizza for 20 - 22 minutes at 475 degrees.
  • As the pizza is cooking, mix together the ingredients for the sour cream drizzle.
  • When the pizza is done cooking, add an arugula salad to the center of the pizza. Mix some pecans into the arugula salad then drizzle some honey over the argala salad. Drizzle the sour cream drizzle over the entire pizza.

Notes

Measuring pizza dough. Are you having trouble figuring out how much pizza dough to use to make this arugula pear pizza? If you are buying pizza dough at the grocery store then there should be a label on the pizza dough that displays the number of ounces in the bag. If you are making your own pizza, you should use around 1 1/2 cups of flour to make the appropriate amount of dough. 9 ounces of dough should be roughly enough to make a 12 inch pizza.
