Cajun black beans and rice

Ingredients

  • 1 cup dried rice
  • 1 can black beans (15 oz can)
  • 2 tsp hot sauce
  • vegetable broth (1 - 2 cups depending on they type of rice)
  • vegetable oil

Vegetables & aromatics

  • 1/2 onion
  • 1/2 green bell pepper
  • 1 stalk celery
  • 1 shallot
  • 1 stalk green onion
  • 2 cloves garlic

Spices

  • 1 tsp smoked paprika
  • 1 tsp garlic
  • 1/2 tsp cayenne
  • 1/2 tsp oregano
  • 1/2 tsp pepper
  • salt (to taste)

Instructions

  • Dice all of the vegetables and aromatics into small pieces.
  • Preheat a medium sized pot over medium heat then add vegetable oil to it. Add the onions and let them cook for 10 minutes. Add the celery, bell pepper, and shallots and let them cook for 10 minutes. Add the garlic and the light green parts of the green onions and let them cook for 2 - 3 minutes.
    Reserve green parts of green onion and add them when the rice is done cooking.
  • Remove the veggies from the pot and set them to the side. Add the rice to the pot and cook it according to the instructions on the package. Replace the water with vegetable broth.
    The exact amount of vegetable broth and cook time will vary depending on the type of rice that is used.
  • Add beans, veggies, spices, and hot sauce to the pot with the rice and mix them well. Heat the rice until the beans are warm.

Notes

Salt. The exact amount of salt that is needed will vary based on the amount of salt in the black beans and vegetable broth. We recommend adding a little salt at a time then tasting the dish to see whether it needs more salt.
