- 1 cup gluten free all purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated white sugar
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup unsalted butter
- 3 tbsp unsweetened applesauce
- 1 tsp vanilla extract
- 3/4 cup chocolate chips
Preheat your oven to 350 degrees.
Mix all of the dry ingredients together in a large mixing bowl.
Melt the butter then mix all of the wet ingredients together in a medium sized mixing bowl.
Pour the wet ingredients into the dry ingredients and mix well.
Line a baking sheet with parchment paper then scoop balls of cookie dough onto the baking sheet. You should leave at least 2 inches of space between each ball of cookie dough. These cookies are meant to spread so they need some space.
Put the cookie dough in the refrigerator and let the cookies chill for 10 minutes.
Bake the cookies for 12 - 14 minutes at 350 degrees. We recommend checking the cookies at 12 minutes.
Xanthan gum. If your gluten free all purpose flour blend does not contain xanthan gum or a similar replacement for gluten then you should add around 1/4 tsp of xanthan gum per cup of flour. Tips for measuring flour. We recommend measuring flour by spooning the flour into a measuring cup then leveling off the flour with a butter knife. This is the most consistent way to measure flour. If you dip your measuring cup into the bag of flour, it will compress the flour and you will end up with extra flour.
