Creamy dill potatoes

Oven roasted potatoes
- 2 lbs white potatoes
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp pepper
Creamy dill sauce
- 2 tbsp Greek yogurt
- 2 tbsp butter (room temperature)
- 1 tbsp fresh dill (unchopped, lightly packed)
- 1 clove garlic
Preheat your oven to 450 degrees.
Dice the potatoes into 1 inch cubes.
In a large bowl, toss the potatoes in salt, pepper, and vegetable oil.
Spread the potatoes out on a few baking sheets that are lined with parchment paper. Cook the potatoes in the oven at 450 degrees for 20 - 22 minutes until they are crispy on the outside and fork tender on the inside. For best results, flip the potatoes around about half way through to ensure that they cook evenly. While the potatoes cook, mince the garlic and dill into small pieces. Combine all of the ingredients for the creamy dill sauce in a small bowl and mix until combined. We recommend using a fork to help combine the greek yogurt and the butter. When the potatoes are done cooking, let them cool for a few minutes then coat them in creamy dill sauce.
