Pre-cook the spinach by microwaving it in a small bowl with 2 tsp of water. Microwave the spinach on full power for 60 seconds.
Reheat the focaccia bread. Microwave the bread on full power for 45 - 75 seconds or bake it in the oven for 5 - 10 minutes at 375.This step is only necessary if you are using leftover focaccia bread. If you are using freshly made focaccia bread you can skip this step.
Slice the bread along the shortest side so that you have one large piece of bread for the top of your sandwiches and one for the bottom of your sandwiches. Put the two pieces of bread on top of each other and cut out sandwich shapes.
Mix the ingredients for the honey balsamic sauce together in a small bowl or mug.
Combine all of the ingredients to make the focaccia sandwiches. First add the ricotta to the sandwiches then then spinach, sun dried tomatoes, and olives. Drizzle some of the honey balsamic sauce over the top of the veggies then top the sandwich with the other slices of bread.
Notes
Open face sandwiches. You can also prepare these focaccia sandwiches as open face sandwiches. If you do this you will need to use twice the amount of toppings for the same amount of bread. This is because you will need to cover each piece of bread with toppings.
