Ingredients

  • 12 oz gluten free gnocchi
  • 1 onion (about 2 cups chopped)
  • 3 cloves garlic
  • 1/2 cup white wine (preferably a dry wine like pinot grigio)
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 tsp gluten free all purpose flour
  • 1/4 tsp salt (plus up to 1/8 tsp more)
  • 1/4 tsp pepper

Instructions

  • Heat a pot of lightly salted water over high heat. Wait until the water boils then add the gnocchi. Cook the gnocchi until it floats to the surface of the water. This should only take 1 - 3 minutes.
While you wait for the water to boil, you can move on to the next step and start chopping the vegetables.
  • Chop the onions into small pieces and mince the garlic.
  • Heat a pan over medium low to medium heat and add the butter. Add the onions to the pan after the butter melts. Add the salt and pepper to the onions.
Cook the onions for 10 - 15 minutes until they lightly brown. Stir occasionally.
  • Add the flour and the garlic to the pan with the onions. Continue to cook the garlic and flour for 2 - 3 minutes.
  • Add the vegetable broth and white wine to the pan with the vegetables. Continue to cook the vegetables until the sauce thickens.
  • Add the heavy cream to the sauce then add the gnocchi. Cook the gnocchi in the sauce for 2 - 3 minutes.
Add up to 1/8 tsp more salt to taste. If the sauce tastes bland or overly creamy, that means it could use more salt.
