Homemade chocolate hazelnut larabar

- 1 cup hazelnuts
- 1/2 cup almonds
- 1 1/4 cup dried dates
- 1 1/2 tbsp cocoa powder
- 1/8 tsp salt
- 1 1/2 tsp vanilla
- 2 tbsp water (as needed to make the dough clump together, add half tbsp at a time)
Put the almonds and hazelnuts in a food processor and pulse a few times.
Add all of the other ingredients other than the water to the food processor and blend on high for 90 seconds.
Check the consistency of the larabar mixture. It should start to clump together into a ball. If the consistency of the mixture is still loose start adding water 1/2 a tbsp at a time then blending for 10 seconds. Add up to 2 tbsp water, as much as is necessary to get the mixture to clump together.
Line a 8 inch x 6 inch food storage container with saran wrap then pour the larabar mixture into the container. Press the mixture down into the container until it is in a compact, flat layer. If you do not have this exact size, any container with similar dimensions will work.
Put the container with the larabar mixture in the refrigerator and let it rest for 30 minutes.
Use a butter knife to cut the larabar mixture into evenly sized bars. Wrap each individual bar with saran wrap if you plan to store them for a few days or longer so that the bars do not dry out.
