Ingredients
- 8 oz gluten free rotini (we recommend chickpea pasta such as Banza brand pasta)
- 1/4 cup black olives
- 1 cup cherry tomatoes
- 1/2 cucumber
- 1/2 red bell pepper
- 1/2 red onion
- 1/2 tbsp red pepper flakes
- 1 tbsp fresh parsley
- 1/4 cup crumbled feta cheese (optional if not vegan or dairy free)
Greek vinaigrette
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- 1 tbsp white sugar
- 1/2 tbsp dijon mustard
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Boil a medium sized pot of water then cook your pasta according to the cooking instructions on the box. Most dried gluten free pasta will need to cook for 7 - 10 minutes. While the pasta is boiling you can start preparing other ingredients for the pasta salad.
- Combine all of the ingredients for the greek vinaigrette dressing then set the dressing to the side.
- Chop the tomato, bell pepper, cucumber, onion, and parsley into small pieces.
- When the pasta is done cooking combine all of the salad ingredients in a large mixing bowl then pour the salad dressing over the top of the pasta salad.
