- 8 corn tortillas
- 1/2 cup feta cheese
- 1/4 red onion
- 2 large tomatoes
Creamy basil sauce
- 1/2 cup basil (fresh, packed)
- 1/2 cup greek yogurt (full fat)
- 1/4 cup heavy cream
- 1 clove garlic
- 2 tbsp olive oil
- 1/8 tsp salt
Harissa roasted cauliflower
- 1 lb cauliflower florets
- 3 tbsp vegetable oil
- 2 tsp harissa
- 1 tsp sugar
- 1/2 tsp salt

Preheat your oven to 425 degrees.
Chop the cauliflower into small to medium sized florets.
Toss the cauliflower in vegetable oil, harissa, sugar, and salt.
Lay the cauliflower out on a baking sheet that is lined with parchment paper. Roast the cauliflower for 20 - 22 minutes at 425 degrees.
Creamy basil sauce
Combine all of the ingredients for the creamy basil sauce in a blender. Blend the ingredients until they are fully combined. Store the creamy basil sauce in the refrigerator until needed.
